Recipe Monday: Vegan “Salmon” Sushi

Sushi with "Salmon" Stuffing
Ingredients
- Look-alike salmon pâté
- 4 nori sheets
- Wasabi
- Bragg Liquid Aminos, Nama Shoyu, or soy sauce
- Thin slices of apple
To Make
Here is one of my favorites: sushi filled with look-alike salmon pâté. Prepare using the procedure outlined below. Top off with thin slices of apple. There are many more ways of filling the nori sheets. Try using your favorite stuffing or simplify by using a variety of vegetables julienne as fillings.
Step 1
Spread rice filling on top of a nori sheet, leaving about an inch (2–3 cm) at one end.
Step 2
Form a line of salmon pâté on the rice, towards the front edge of the nori sheet.
Step 3
Add additional fillings
Step 4
Start rolling from the end containing the filling.
Step 5
Carefully roll using a bamboo roller.
Step 6
Stop when you get to the free end. Spread a little water on the seaweed end and roll the end.
Step 7
Use a very sharp knife to carefully cut the roll into sushi pieces.
Look-alike Salmon Pâté
Ingredients
- 1 cup (250 g) walnuts, soaked 6 hours
- 1 stalk celery
- 1 large red bell pepper
- 1 shallot
- ½–1 teaspoon salt
To Make
Peel the shallot and chop it together with the celery and the red bell pepper. Mix all the ingredients in a food processor and blend until the consistency is like pâté.
